Easy Bow-Tie Pasta Supreme Recipe

Bow Tie Pasta Supreme       Since we all seem to need some new easy dinner ideas, I thought I would start posting some of my family’s favorite original recipes. These are dishes that have become a tradition in our family, meaning my hubby and kids love them, they’re pretty easy (yay for me!), and don’t require a huge amount of ingredients. So, today I’m sharing an easy pasta dish with added chicken and vegetables. All you need to add to it is maybe a side salad and breadsticks. My kids love it! I hope you do too! 

 Ingredients

1 lb. boneless chicken breasts, cut into 1 inch pieces

12 oz.bow-tie pasta

14 oz. frozen broccoli florets

1 cup grape tomatoes, cut in half

chopped red onion, optional

4 oz.feta cheese, crumbled

extra virgin olive oil

1/4 cup lemon juice

3 Tbsp.oregeno

1 Teaspoon garlic powder 

salt, to taste

   

     Drizzle olive oil in large skillet. Chop chicken breasts into 1-inch pieces. Cook in oil till cooked through. Meanwhile, cook bow-tie pasta in boiling water according to package directions. After chicken is done, remove from skillet and set aside. Add 2 Tbsp. oil to pan. Saute broccoli and grape tomatoes for about 8 minutes. Then add the chicken and drained pasta to the vegetables in skillet and stir together. Drizzle olive oil over the mixture. Add lemon juice, oregano, garlic powder, and salt to taste. Stir all together and warm up for about 5 minutes. Sprinkle feta cheese on top. Serve with breadsticks. Serves about 6. Enjoy!
